This Crock Pot Beef Barbacoa recipe is layered with citrus flavors, chilis, and spices. Chuck roast is the perfect kind of low carb protein to slow cook. Your Crock Pot is a great kitchen assistant when it comes to cutting down on meal prep time.
You can set a few days’ worth of a meal to cook in the morning, then go do your thing and come home to not only dinner but a few days of leftovers that are great for portioning.
If you like spicy barbacoa, then go ahead and add one or two more chilis. If you like things more on the mild side, you might want to do one chili and cut back on the accompanying adobo sauce.
When the beef is done cooking you will find you have plenty of sauce to spare. You can pour it over your dinner, discard it or save a little to pour over your leftovers to keep them moist.
Of course, you don’t want just a bowl of beef barbacoa, although it is low carb. You can go wild on the low carb fixings. Serve the beef over a plate or bowl of shredded cabbage or lettuce and top with cilantro, cheese, avocado slices, and a little squeeze of lime. It’s almost like an unstuffed burrito.

This low carb Crock Pot beef barbacoa recipe is one of our favorites because it utilizes beef chuck roast, one of the most affordable cuts of meat out there. That doesn’t mean the meat isn’t good; it will become amazing.
It just needs a little help from things like onions, garlic, beef broth, apple cider vinegar, and cumin. There will also be chipotle chiles in adobo sauce. Those chiles will add a ton of flavor to this dish.
In fact, these chiles are just as important as the meat itself.
How to Make Crock Pot Beef Barbacoa
Sprinkle the beef with salt and pepper and set aside.
Add the remaining ingredients to a food processor or into a small bowl to blend with a stick blender. Blend until all the ingredients are incorporated. Set aside.
Heat the oil in a large skillet over medium-high heat and add the beef. Brown on both sides, about 2-3 minutes per side. When you are browning the second side, add the onions to the pan and let them cook slightly.
Add the beef to your Crock Pot, then pour the sauce over the top. Secure the Crock Pot lid and cook for 4-6 hours on high or 8-10 hours on low.
Once the barbacoa is cooked, you can give it a quick shred with two forks and serve warm.

- 3 Lbs Beef Chuck Roast Cut into Cubes like Stew Meat
- 1 Cup Diced Onion
- 2 Tbsp Garlic Diced
- 1/2 Cup Beef broth
- 1/4 Cup Beef Broth
- 1/4 Cup Fresh Lime Juice About 2 Limes
- 2 Tbsp Apple Cider Vinegar
- 1 Tbsp Cumin
- 3 Chipotle Chiles in Adobo Sauce Chopped Small, with Some Sauce
- 1 Tsp Oregano
- 2 Tsp Salt
- Pepper To Taste
- Oil or Butter For Browning

Just ate it, and yes I made it. Followed directions to a T. It was awesome. I have NEVER BEEN able to cook pot roast or anything like this.(I spend a lot of money on meat) This was so tender, and fell apart. My husband is very picky about meat, he LOVED it.
