That doesn’t mean the meat isn’t good; it will become amazing. It just needs a little help from things like onions, garlic, beef broth, apple cider vinegar, and cumin.

Directions

Sprinkle the beef with salt and pepper and set aside.

Add the remaining ingredients to a food processor or into a small bowl to blend with a stick blender.  Blend until all the ingredients are incorporated.  Set aside.

Heat the oil in a large skillet over medium-high heat and add the beef.  Brown on both sides, about 2-3 minutes per side.  When you are browning the second side, add the onions to the pan and let them cook slightly. 

Add the beef to your Crock Pot, then pour the sauce over the top.  Secure the Crock Pot lid and cook for 4-6 hours on high or 8-10 hours on low.

  • 3 Lbs Beef Chuck Roast Cut into Cubes like Stew Meat
  • 1 Cup Diced Onion
  • 2 Tbsp Garlic Diced

  • 1/4 Cup Fresh Lime Juice About 2 Limes
  • 2 Tbsp Apple Cider Vinegar
  • 1 Tbsp Cumin
  • 3 Chipotle Chiles in Adobo Sauce Chopped Small, with Some Sauce
  • 1 Tsp Oregano
  • 2 Tsp Salt
  • Pepper To Taste
  • Oil or Butter For Browning
