Low Carb Crockpot Chicken and Veggies Soup Ingredients

Eating healthily always seems like a daunting taks until after you’ve started. The trick is finding recipes that are easy, healthy, and that you can enjoy.

This is one of those recipes, even if the ingredients list might be longer than you’re familiar with. The most important ingredients in this low carb soup include the chicken breasts, chicken broth, and the zucchini noodles.

Low Carb Crockpot Chicken and Veggies Soup Ingredients

The veggies will add plenty of nutritional value as well. Carrots, celery, onions will all be delicious additions. However, the seasonings will give you the most flavor in every bite.

You can use bay leaves, dried thyme, smoked paprika, salt and black pepper.

Directions

Heat oil in a medium pan and sauté onion, celery, garlic, and carrots about 5 minutes until tender. 

Add the vegetables to your Crock Pot and add all remaining ingredients, except for the zucchini noodles. Cover and cook on high for 3 hours or low for 6 hours. Chicken should be tender and fall apart easily with a fork.

Prepare your zucchini noodles. If they are fresh, you may need to sauté them for a few minutes in a medium pan with a little water to soften them to your taste. 

Remove the cooked chicken from the pot and place in a large bowl.  Shred the chicken with 2 forks and place back into the soup.

Place zucchini noodles in each serving bowl and spoon soup over the noodles when you are ready to serve.

  • 2 Tbsp Avocado Oil
  • 4-5 Boneless, Skinless Chicken Breasts
  • 4 Cups Chicken Broth
  • 3 Carrots Cut into rounds
  • 3 Celery Stalks Sliced
  • 2/3 Cup Onion Chopped
  • 2 Cloves Garlic Minced
  • 4 Cups Zucchini Noodles
  • 1 Lemon Juiced
  • 2 Bay Leaves
  • 1 Tsp Dried Thyme
  • 1/2 Tsp Smoked Paprika
  • 2 Tsp Black Pepper
  • 2 Tsp Salt
  • Sliced Green Onion Optional for serving
  • Fresh Parsley Optional for serving
