Pizza night, pizza parties..we love pizza! It’s always top of the list of just about anybody’s favorite foods. Our low carb crockpot pizza casserole offers a healthy and tasty twist on a well-loved dish making it a healthy meal planning recipe you can enjoy whenever you desire.
It’s the crust, after all, that keeps the pizza from becoming a mess of gooey cheese and sauce. In low carb cooking, one way to solve that problem is to replace carbs with protein. This Crock Pot pizza uses a base of seasoned ground beef to hold all your favorite toppings.
You can use any of your favorite pizza toppings in this recipe. We’ve used pepperoni, mushroom, and sliced Roma tomatoes, but you don’t need to stop there. Any low carb pizza topping will work. One key is to use a pizza sauce that contains no sugar or corn syrup.
They are readily available in your local grocery store. You’ll just need to read a label or two. One prep tip for you: When making your casserole, be sure to drain as much of the liquid off of your ground beef as possible. The sauce and layers of cheese should do the job of keeping your casserole together.
Once the pizza casserole has finished cooking, let it cool for about 20 minutes before digging in. In the meantime, you can prepare a salad full of veggies and a low carb dressing and have a complete family meal. If you have leftovers, and chances are you won’t, they do keep well in the refrigerator for several days.
A low carb pizza casserole also makes a great lunch to portion and take with you the next day.
Low Carb Crock Pot Pizza Casserole Ingredients
The ingredients will help make this recipe low carb. Pizza is far from keto, but if you subtract and add the right things, you will make it keto. Go with lean ground beef, and fresh baby bella mushrooms, onions, Roma tomatoes, and garlic.
You will also need mozzarella cheese, but the thing to pay attention to is the sauce you choose. You will want to use sugar-free pizza sauce. You can find that at your local grocery store; just make sure it says no sugar or sugar-free. It gets easier after that.
Brown the ground beef in a large skillet. When nearly browned, drain off the fat and add the onion, oregano, salt, pepper, and garlic. Over medium heat, store and cook for about 4 minutes until the onion is soft.
Spray your crockpot with oil to prevent the casserole from sticking. Then add the ground beef mixture to the pot and stir in 2 cups of the mozzarella.
Pour the pizza sauce over the ground beef mixture, covering the entire mixture.
Layer 1 cup of mozzarella over the sauce.
Place your topping on the sauce starting with the Roma tomato slices, then mushrooms and pepperoni.
Top the casserole with 1 cup of parmesan.
Cover and cook on low for 3 hours.
Low Carb Crockpot Pizza Casserole
- 2 Lbs Ground Beef
- 1 Cup Sliced Baby Bella Mushrooms
- 1 Medium Onion Chopped
- 1 Roma Tomato Sliced
- 1 Clove Garlic Minced
- 26-36 Pepperoni Slices
- 1 Tsp Oregano
- 3 Cups Mozzarella Cheese
- 2 14 oz Jars Pizza Sauce Sugar-Free
- 1 Cup Parmesan Cheese Grated
- Salt and Pepper to Taste

- Pour the pizza sauce over the ground beef mixture, covering the entire mixture
- Layer 1 cup of mozzarella over the sauce.
- Place your topping on the sauce starting with the roma tomato slices, then mushrooms and pepperoni.
- Top the casserole with 1 cup of parmesan.
- Cover and cook on low for 3 hours.
