How to Make Crockpot Chicken and Veggies Soup
Heat oil in a medium pan and sauté onion, celery, garlic, and carrots for about 5 minutes until tender.
Add the vegetables to your Crock Pot and add all remaining ingredients, except for the zucchini noodles. Cover and cook on high for 3 hours or low for 6 hours. Chicken should be tender and fall apart easily with a fork.
Prepare your zucchini noodles. If they are fresh, you may need to sauté them for a few minutes in a medium pan with a little water to soften them to your taste.
Remove the cooked chicken from the pot and place in a large bowl. Shred the chicken with 2 forks and place back into the soup.

- 2 Tbsp Avocado Oil
- 4-5 Boneless, Skinless Chicken Breasts
- 4 Cups Chicken Broth
- 3 Carrots Cut into rounds
- 3 Celery Stalks Sliced
- 2/3 Cup Onion Chopped
- 2 Cloves Garlic Minced
- 4 Cups Zucchini Noodles
- 1 Lemon Juiced
- 2 Bay Leaves
- 1 Tsp Dried Thyme
- 1/2 Tsp Smoked Paprika
- 2 Tsp Black Pepper
- 2 Tsp Salt
- Sliced Green Onion Optional for serving
- Fresh Parsley Optional for serving
