Although the keto diet is proven to work, there’s no denying that it’s not easy to give up some of our favorite foods. That leaves keto followers everywhere trying to find ways to satisfy cravings without laying to waste all of their good habits and intentions. Enter keto breakfast muffins!
Chocolatey, freshly-baked muffins are a thing of keto dieters’ dreams! Now you can have your muffins and eat them too with these keto breakfast muffins that make for a great keto breakfast option. These Cacao avocado keto breakfast muffins are easy, even for a non-baker, to blend up in a few minutes.
They are such a delicious way to fix your chocolate or muffin craving that even the non-keto dieters in your house are going to love them. In fact, you might want to keep them all to yourself. Find that little hiding spot in your kitchen (I know you have one, too) and grab the ingredients for these tasty treats.
One tip for keto baking is sweetener replacement. You have a few choices, but Monk Fruit is one of the best. Monk fruit sweetener gives these muffins the sugary sweetness you are looking for with zero effect on blood sugar.
Getting a chocolate flavor without the processed chocolate is as simple as Cacao. Cacao nibs provide a dark chocolate flavor with a superfood punch. Cacao powder is very similar in texture and taste to cocoa powder, but keto compliant.
Adding avocado binds the mixture together with healthy fats. The delicious combination will leave you feeling satisfied at breakfast or your afternoon snack. Who needs a cheat day when you have these?
Keto Breakfast Muffins Ingredients
The ingredients are the most important part of any keto recipe. You must use the right ingredients to ensure that the end result is keto-friendly. For example, you could use sugar instead of an alternative sweetener but then the muffins won’t be keto muffins.
That means you will need to follow the directions exactly in order to get keto breakfast muffins. You will need things like mashed avocados, Monk Fruit Sweetener, eggs, unsweetened coconut milk, coconut flour, cacao powder, baking powder, salt, cacao nibs, and coconut oil.
You will also want to use a good muffin baking tray. The direction here will make you 6 large muffins or 12 mini muffins; the choice is yours. The tray you choose will decide what size your keto breakfast muffins will be.
Keto Muffins Directions
Preheat oven to 350.
In a large mixing bowl, whisk together the flour and cacao powder. Then add the sweetener, baking powder, and salt. Whisk till evenly blended. Set aside.
In another bowl, add the eggs, coconut milk, and avocado and mix with a hand blender until smooth. (You can also do this in a blender)
Fold the wet ingredients into the dry ingredients and blend again until smooth. Then fold in the cacao nibs, saving a little bit for the top of each muffin.
Spray or grease a muffin pan with coconut oil, then fill it with the mixture. Don’t overfill, as these muffins tend to rise. Sprinkle the remaining cacao nibs on top.
Bake at 350 on the center rack for about 25 minutes.
Once done, let the muffins cool for 30 minutes.
