This recipe includes lots of fresh vegetables which makes it delicious on all kinds of chips, crackers, and even salad or over some whole grain rice.

I love these serving dishes and occasionally I’ll use one like this if we’re headed to a party and I want to give everyone some options! The best tip I can give you for making this recipe is to chop the vegetables nice and small. And while it takes some time to chop them, you receive the reward as you enjoy it on everything.

I usually add less avocado if I know we will not finish the entire recipe in one day and add more to it each day so the avocado is fresh and looks beautiful in the mix of veggies.

Cowboy caviar is a dip, a salad topping, or a meal all on its own. But what you will notice with these ingredients is that everything is also healthy. It’s like a savory delicious health bomb of a mixture filled with vitamins and nutrients.

Those nutrients come from the Roma tomatoes, the peppers, the avocados, the olive oil, the beans, and all the other ingredients. What ends up happening is that you make a dish that is amazing to eat but even healthier than it tastes.

Cowboy Caviar Dip Prep Time

Allow about 30 to 45 minutes to chop the vegetables depending upon your speed and expertise. The rest of the preparation takes twenty minutes tops! This dish will serve 6-8 people easily.

Directions for Cowboy Caviar Recipe

Finely chop all vegetables and mix together.

Sprinkle salt and pepper over top of mixture and mix together.

Sprinkle garlic powder over top of mixture and mix together.

Add cilantro over top of mixture and mix together.

  • 2 Roma tomatoes
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1/2 red onion medium
  • 2 avocados
  • 1 can black beans
  • 1 tbsp olive oil light
  • 1 1/2 tsp vinegar
  • 1 1/2 tsp hot sauce
  • salt
  • pepper
  • garlic salt
  • cilantro

Instructions

  • Finely chop all vegetables and mix together.
