Low Carb Mini Bell Pepper Nachos Ingredients
Everyone wants an easy way to enjoy foods they love but they also want to feel good about what they eat. There are times when those two things don’t mix.
The trick, is finding ways around the parts of a recipe that are unhealthy or that go against your diet. This low carb mini bell pepper nachos recipe is a great example.
Instead of using tortilla chips you can use mini bell peppers. You can substitute the ground beef for ground turkey.
Everything else will be normal like red onions, garlic, chili powder, ground cumin, oregano, salsa, cilantro, and olives.
Directions
Preheat the oven to 400 degrees.
In a large, non-stick skillet, over medium heat, begin to brown the ground turkey and chopped red onion. When the turkey is nearly browned, add in the minced garlic.
Remove from heat.
Add all the spices and salsa. Stir to combine all ingredients.
Line a baking tray with parchment paper or foil and arrange the halved peppers on the sheet.
Spoon the turkey mixture over each of the peppers. Then top with the shredded cheese. Bake for 7 to 10 minutes or until the cheese is melted and bubbly.
Remove the nachos from the oven and top with black olives, fresh cilantro, and a dollop of sour cream.
Serve warm with avocado on the side.

- 1 Lb Mini Bell Peppers Cut in half and remove the seeds
- 1 Lb Ground Turkey
- 1/2 Cup Red Onion

- 1 Tsp Ground Cumin
- 1/2 Tsp Oregano
- 1/4 Tsp Salt
- 1 Cup Prepared Salsa No sugar added
- 1 Cup Fresh Cilantro Removed from stem and roughly chopped
- 1 Cup Black Olives Sliced
- 1 Cup Shredded Cheese
- Sliced Avocado
- 1 Cup Sour Cream
Instructions
