2B Mindset Cowboy Caviar Ingredients
All of the ingredients in this recipe can be fresh and are healthy. Of course, you could find canned versions of most of the ingredients and there is nothing wrong with that. But fresh is always better. You should definitely try to make this as fresh as you can if possible.
The Roma tomatoes, red, yellow, and orange bell peppers, the onion and avocados all taste so much better fresh.
You will need black beans as well and the canned version is fine. This recipe could be vegan as long as you make sure you use canned black beans that are vegan. Of course, you will want to add some spice, too and the hot sauce you use is entirely up to you.
Finely chop all vegetables and mix together.
Sprinkle salt and pepper over top of the mixture and mix together.
Sprinkle garlic powder over the top of the mixture and mix together.
Sprinkle cilantro over top of the mixture and mix together.
Allow to set in the refrigerator for 30 minutes and serve chilled.

- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 1 Orange Bell Pepper
- 1/2 Medium Red Onion

- 1 Tbsp Olive Oil Light
- 1 1/2 Tsp Vinegar
- 1 1/2 Tsp Hot Sauce
- Garlic Salt

- Sprinkle cilantro over top of the mixture and mix together.
