Set it and forget it. I can even travel with this for a party or BBQ. This recipe for Crockpot cheesy hashbrowns is the perfect cheesy potato side dish. Plus, they’re so easy to make you’ll love making them too!
They stay warm, cheesy, and delicious, and I don’t have to lift a finger. One good stir at the beginning, and you’re basically DONE! Crockpot cheesy hashbrowns are easy to make because there are only a few ingredients!
Another reason I love making these cheesy potatoes as a side dish is because they’re easy to double. I can fill the Crockpot, feed the whole crowd, and again…little to no effort on my part.

You can also make this recipe in the Instant Pot on the slow cooker setting. So if you’ve switched over to the Instant Pot, you can still enjoy these Crockpot cheesy hashbrowns.
This is a delicious breakfast recipe; cheesy potatoes everyone can enjoy with their eggs! This recipe calls for shredded hashbrowns. However, you do not have to use shredded hashbrowns; you can use whatever type you’d like or is available.
The recipe will still taste great, even with those hashbrowns that have mixed veggies.
Ingredients Needed for this Cheesy Potatoes Side Dish
There really isn’t much of a change that is needed to hash browns; they’re great just the way they are. Shredded or cubed potatoes are all you need. But there are ways to enhance them; they may not be needed.
But after you try them, you’ll want them.
Start with frozen potatoes to make it easier, then, a Cream of Chicken Soup, sour cream, a Medium Yellow Onion, cheese, and lastly, Lays Plain Potato Chips.
That’s right; we’ll add potato chips to potato hash browns. It will be amazing.

Mix well until everything is combined.
Cook on high for 2 hours and 45 minutes or on low for 4.5 hours.
Cook until cheese is melted and hash browns are cooked through.
Add crushed potato chips to the top before serving. They will get mushy if added too soon. You can even serve them on the side as a topping!
