Head to the nearest farmer’s market and find the freshest garlic, onions, bell peppers, cilantro, and jalapenos. Then, use your favorite skinless, boneless chicken breasts, chicken stalk, and tri-color tortilla strips.
The canned ingredients make the recipe easier. Like fire-roasted tomatoes. Unless you’re a confident chef, stick with the canned options as they will be easier and quicker.
But go the extra mile if you can by the fire roasting your own tomatoes and dicing your own tomatoes and green chilis.
Pour organic chicken stock into a slow cooker and also add
uncooked chicken breast.
Sauté onions, garlic & jalapeño in olive oil in a pan on the stovetop and then add to crockpot.
Add Rotel, diced & fire-roasted tomatoes, black beans & corn & bell pepper to crockpot.
Add spices which include ground cumin, chili powder & paprika.
Salt & pepper to taste.
Cook on low for 6 hrs.
Shred chicken and add back to the crockpot in addition to cilantro.
Serve with tortilla strips and sliced avocado.

- 1 1/2 Lbs Boneless, Skinless Chicken Breast
- 1 Tbsp Olive Oil
- 1 Onion Chopped
- 3 Garlic Cloves
- 1 Jalapeno
- 1 14 Oz Organic Diced Fire Roasted Tomatoes With Green Chilis
- 1 Can Rotel with Diced Tomatoes & Green Chilis
- 1 15Oz Can Organic Black Beans Drained & Rinsed
- 1 1/2 Cup Frozen Corn
- 1 Red Bell Pepper Chopped
- 2 Tsp Ground Cumin
- 2 Tsp Chili Powder
- 3/4 Tsp Paprika
- 1/2 Cup Cilantro
- 2 Avocados
- 1 4Oz Bag of Tri-Color Tortilla Strips
- Salt & Pepper To Taste
