The ingredients are the most important part of any keto recipe. You must use the right ingredients to ensure that the end result is keto-friendly.
For example, you could use sugar instead of an alternative sweetener, but the muffins won’t be keto. That means you will need to follow the directions exactly in order to get keto breakfast muffins.
You will need things like mashed avocados, Monk Fruit Sweetener, eggs, unsweetened coconut milk, coconut flour, cacao powder, baking powder, salt, cacao nibs, and coconut oil.
You will also want to use a good muffin baking tray. The direction here will make you 6 large muffins or 12 mini muffins; the choice is yours. The tray you choose will decide what size your keto breakfast muffins will be.
How to Make Keto Breakfast Muffins
Preheat oven to 350.
In a large mixing bowl, whisk together the flour and cacao powder. Then add the sweetener, baking powder, and salt. Whisk till evenly blended. Set aside.
In another bowl, add the eggs, coconut milk, and avocado and mix with a hand blender until smooth. (You can also do this in a blender)
Fold the wet ingredients into the dry ingredients and blend again until smooth. Then fold in the cacao nibs, saving a little bit for the top of each muffin.
Spray or grease a muffin pan with coconut oil, then fill it with the mixture. Don’t overfill, as these muffins tend to rise. Sprinkle the remaining cacao nibs on top.
Bake at 350 on the center rack for about 25 minutes.
Once done, let the muffins cool for 30 minutes.
