Low Carb Crock Pot Stuffed Peppers Ingredients
This recipe is not only healthy but it fits into a keto or low carb diet. The trick is finding the right ingredients to ensure it fits within your personal meal plan. The bell peppers will be the easy part. But you will also need ground beef, parmesan cheese, onions, garlic, tomato sauce, mixed veggies, and beef broth.
Normally, this recipe has rice in it but we are going to use cauliflower rice for the added health benefits.
Spray the inside of your crock pot with a nonstick spray.
Cut the tops off each of the bell peppers and remove all the seeds. Set aside.
In a large bowl, combine all the remaining ingredients, except the beef broth, and mix well.
Pour the beef broth into the bottom of the crock pot.
Spoon the filling into each pepper. Fill all the way to the top.
Gently place each stuffed pepper into the crock pot. Cover and cook on high for 4 hours or low for 8 hours.

- 6 Bell Peppers
- 2 Lbs Ground Beef
- 2 Cups Riced Cauliflower
- 1/2 Cup Parmesan Cheese Grated
- 1 Small Onion Diced
- 3 Tsp Italian Seasoning
- 1 1/2 Tsp Salt
- 1 Tsp Pepper
- 1 Garlic Clove Minced
- 1 Cup Tomato Sauce No Sugar
- 1 Cup Frozen Mixed Vegetables
- 1/2 Cup Beef Broth or Water
- Spray the inside of your crock pot with a nonstick spray.
