She worked in the Zodiac Room, a fine dining establishment inside Neiman Marcus in Dallas, Texas, at the time. The name comes from the dish’s appearance.

  • Bell Peppers – This recipe uses red, yellow, and orange bell peppers. This means some dicing is required, but you can choose how big or small.
  • Red Onion – Adds a bit of sweetness along with the usual onion flavor. It is perfect alongside the tomatoes.

How to make Cowboy Caviar

  • Finely chop all vegetables and mix together with the olive oil and vinegar.
  • Add garlic salt a teaspoon at a time, mixing and tasting along the way until you get a flavor you enjoy.
  • Sprinkle salt and pepper over the top of the mixture and mix together.
  • Sprinkle cilantro over the top of the mixture and toss to combine.
  • Let it set in the refrigerator for 30 minutes, then serve chilled.

Ingredients

  • 2 Roma Tomatoes
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 1 Orange Bell Pepper
  • 1/2 Medium Red Onion
  • 2 Avocados
  • 1 Can Black Beans
  • 1 Tbsp Olive Oil Light
  • 1 1/2 Tsp Vinegar
  • 1 1/2 Tsp Hot Sauce
  • Salt
  • Pepper
  • Garlic Salt
  • Cilantro

Instructions

  • Finely chop all vegetables and mix together.
  • Sprinkle salt and pepper over top of mixture and mix together.
  • Sprinkle garlic powder over the top of the mixture and mix together.
  • Sprinkle cilantro over top of the mixture and mix together.
  • Allow to set in the refrigerator for 30 minutes and serve chilled.

Notes

Allow about 30 to 45 minutes to chop the vegetables depending upon your speed and expertise. The rest of the preparation takes twenty minutes tops! This dish will serve 6-8 people easily.
