However, the beef in this recipe has zero carbs, so it is filling and fitting into the diet plan. Every low carb dieter knows that the trickiest part is veggies.
But this recipe uses kale, celery, carrots, and turnips. However, you can use whatever veggies you’d like. That’s the beauty of a stew; it’s very customizable, and the only staple is the beef.
You can make your own version of this keto beef stew recipe using different veggies like green beans, peas, or Brussels sprouts. Of course, the possibilities are endless here, and any veggie you like would be a great substitute.
You will want to remember the net carbs when picking veggies for the dish. Finding an easy keto recipe with the proper carb count can be pretty simple with a few easy tips.
Meats like beef chuck roast, chicken, or even pork have close to zero, if not zero, carbs. This will make low carb diets more difficult for vegetarians and vegans, not impossible, just more difficult.
Meat eaters can fill their meals with any type of meat they love, and they often serve meals the whole family can enjoy. Of course, there’s nothing wrong with making extra of your favorite recipes; that is what meal prep is all about.
Meal prep is when you make a big batch recipe, like a low-carb beef stew, and then separate the leftovers into single servings. Those single servings can be stored in the fridge or the freezer for later.
Essentially, it uses the idea of leftovers to help us save time later. You could heat up a serving the next day and avoid cooking something new.
You could also plan the entire week by meal-prepping a couple of different recipes at the start of the week when you have more time.
Quick and Easy Low Carb Beef Stew Recipe
What is the difference between a traditional beef stew recipe and a low carb beef stew recipe? One of the biggest differences between the two is the potato.
A classic beef stew recipe will always include potatoes. You could often find recipes with sweet potatoes, russet, or Yukon gold. The problem is that potatoes are carb-heavy.
One potato has 25 grams of carbs, close to half what most people will want for the entire day. You may think you can’t get a hearty low carb beef stew without the potatoes.
But the tender beef chuck and bone broth instead of water will help make this a hearty keto beef stew that you will enjoy. The combination of beef stew meat and veggies gives you a ton of flavor the next time you need something quick and easy.
This recipe is perfect for cold winter nights, chilly fall evenings, or when you just want some good stuff to eat that fits into your nutrition plan.
It is a great way to save time and is always a good option for a keto diet.
Keto Beef Stew Ingredients
The recipe card for an easy low carb beef stew recipe is a bit long, but that doesn’t mean it will be difficult. There will be some slicing and dicing you need to do, but using the Instant Pot beats standing over a stove top for an entire evening.
The most important ingredient in this recipe is the lean beef stew meat. These chunks of beef will provide a lot of flavor and heartiness to the dish.
Sometimes, you can find the best stew meat cut into cubes at the grocery store, but a chuck roast will do just fine. Traditional beef stew uses flour to help thicken the sauce, but we will use arrowroot powder to keep things low carb.
We will also need avocado oil or olive oil to help brown the meat, and the sauce will use tomato paste, beef stock, chicken stock, or bone broth.
The veggies can be customized, but this recipe uses kale, mushrooms, turnips, celery, carrots, and onions. Lastly, we will use garlic, thyme, parsley, bay leaves, and salt and pepper for flavor.
Fresh ingredients, like garlic cloves, will always beat dried seasoning instead of garlic powder. However, you can use any dried seasoning version of these herbs to get your desired flavor.
How to Make Low Carb Instant Pot Beef Stew
In a mixing bowl, combine the Arrowroot powder, salt, and pepper. Then, add the beef chunks and dredge them in the powder combination.
Heat the oil in your Instant Pot on “sauté”. Then, carefully add the beef, not letting the pieces touch each other. Brown for 3-5 minutes on each side. Remove the beef to a plate and set aside.
Pour one cup of the beef broth into the hot Instant Pot and scrape with a spatula to pick up the tasty, browned bits.
Place the browned beef along with the rest of the ingredients into your Instant Pot.
Place the cover on the slow cooker and lock. Set at high pressure for 30 minutes.
When the cooking time has finished, let the Instant Pot release naturally for 15 minutes. Then, carefully “quick release” the remaining pressure. There should not be much.
Before serving, remove the bay leaves and taste the stew again to adjust seasonings if necessary.
