Healthy Steak Fajitas Recipe with Marinade for the Crock Pot

Make this healthy steak fajitas recipe with marinade to turn beef as simple as flank steak into an easy dinner with the best flavor for the whole family. Fajitas aren’t often made at home just because they make a bit of a mess.

We have to prepare the marinade ingredients, fry everything in a cast iron, and then serve. That frying leads to splatter everywhere. Traditional fajitas come from a delicious recipe.

However, that doesn’t mean we have to stick to traditional methods. We can switch things up to make the cooking process cleaner and easier without sacrificing flavor. The trick here is in the marinade.

Beef develops a crust that is very flavorful while the meat cooks. We can replace that flavor with the marinade to get something just as delicious that we can add to our weekly rotation.

Who wouldn’t want an easy recipe that produces great flavor?

Crock Pot Steak Fajitas Ingredients

  • Avocado Oil – No, we won’t be using this to fry the beef. Instead, we need the oil to help the beef absorb the marinade more easily.
  • Lime Zest – Citrus and beef can be dangerous. It is important not to overmarinate the meat. Too much citrus for too long can cause the beef to break down before it is cooked, leading to tough, chewy meat.
  • Worcestershire Sauce – Is there a single beef recipe that doesn’t have Worcestershire in it? This sauce is going to go a long way in giving us that tangy, salty fried flavor without the meat touching a single pan.
  • Cumin – Cumin is prominently a North Mexican ingredient, though it is used throughout Mexico a little bit. One smell and you will think you’re in a taqueria.

  • Oregano – Oregano will add some earthy flavor with a bit of bitterness. That bitterness will help calm the citrus after it’s done its job of breaking down the connective tissue a bit.
  • Red Pepper Flakes – Spice is always optional. However, these red pepper flakes add more than just spice to the spice blend. It is one of the great ways of adding a touch of spice without losing control. This wraps up the best beef fajitas spice mix.
  • Garlic – We prefer using fresh garlic cloves because they add more flavor than the pre-minced jar. Double or maybe triple the amount if you use pre-minced garlic.
  • Flank Steak – The steak is the star of the show. We use flank steak because it is more affordable and easier to work with. However, you can take things to the next level by using sirloin steak, skirt steak, or any other cut of steak you enjoy most.

  • Red and Green Bell Peppers – We can’t make this easy steak fajitas recipe without using some red bell peppers and green bell peppers. They will need to be sliced into thin strips, but that won’t take long at all.
  • Onion – Usually, we would want to dice the onion and add it to the mixture. This time, we will be cutting the onion into slices, and it will become a major part of the dish.
  • Beef Bone Broth – Crockpots will need a bit of water inside to help cook all of the ingredients evenly. Using bone broth instead of water adds flavor as well as nutrients to this healthy steak fajitas recipe with marinade.
  • Cilantro – Top everything off with a bit of chopped cilantro. This is optional, but it does make this recipe even better.

Optional Toppings for Fajitas

We can enjoy this healthy steak fajitas recipe with marinade simply as it is, without cilantro or anything else. However, the experience is made better with the optional toppings.

For example, we can add flour tortillas or corn tortillas to eat the fajitas. We can also squeeze some lime juice on at this time since we are about to eat it. A complete meal can be made with the addition of cauliflower rice topped with pico de gallo or fresh salsa.

A dollop of sour cream can go a long way here as well. This recipe can be customized by focusing on the toppings. It is an easy meal prep recipe or a quick dinner on busy weeknights.

  1. This is SO good! We had a couple skirt and flank steaks when we ordered beef this year. I’d never cooked these cuts before, so this is the recipe I used for my first try. I did let sit in the marinade for 48 hours in the fridge for 2 days before I was ready to cook it, then crock pot on low for 7 hours. Amazing!! I would think this would be good for venison as well.
