How to Make Homemade Tortilla Soup
Pour organic chicken stock into a slow cooker and add
uncooked chicken breast.
Sauté onions, garlic & jalapeño in olive oil in a pan on the stovetop and then add to crockpot.
Add Rotel, diced & fire-roasted tomatoes, black beans & corn & bell pepper to crockpot.
Add spices, which include ground cumin, chili powder & paprika.
Salt & pepper to taste.
Cook on low for 6 hrs.
Shred the chicken and add it back to the crockpot in addition to the cilantro.
Serve with tortilla strips and sliced avocado.

- 4 Cups Chicken Stock
- 1 1/2 Lbs Boneless, Skinless Chicken Breast
- 1 Tbsp Olive Oil
- 1 Onion Chopped
- 3 Garlic Cloves
- 1 Jalapeno
- 1 14 Oz Organic Diced Fire Roasted Tomatoes With Green Chilis
- 1 Can Rotel with Diced Tomatoes & Green Chilis
- 1 15Oz Can Organic Black Beans Drained & Rinsed
- 1 1/2 Cup Frozen Corn
- 1 Red Bell Pepper Chopped
- 2 Tsp Ground Cumin
- 2 Tsp Chili Powder
- 3/4 Tsp Paprika
- 1/2 Cup Cilantro
- 2 Avocados
- 1 4Oz Bag of Tri-Color Tortilla Strips
- Salt & Pepper To Taste
Instructions
