I want to love to cook.
But if I am honest with myself, I love to bake and I love to cook when it is easy.
I stumbled upon this incredibly easy cheese black bean dip recipe while shopping at Trader Joe’s. Each and every time we make it, we love it and our guests wonder how I came up with this amazing creation.
The recipe is the definition of easy with only two ingredients and it can be made in the crock pot or on the stove top. Simply double or triple it depending on the amount of people you need to serve. I would recommend using one serving for 2-3 people, doubling it for 4-6 people and tripling it for large parties.
This easy cheese black bean dip recipe is beyond incredible – so incredible that we sometimes just eat this as a light dinner. Trader Joe’s has organic blue corn tortilla chips that are perfect to serve with this bean dip.
We also have made it as a topping over enchiladas, tacos, and taco salad. No matter how you serve it, I can pretty much guarantee you will fall in love.
- can Trader Joe’s Organic Black Bean Soup (Drain a bit)
- 1 Container Trader Joe’s Jalapeno and Cheddar Pub Cheese
Directions for Easy Cheesy Black Bean Dip:
- Mix both ingredients in crock pot and cook on low for 2 hours. Do not overheat as it makes it runny.
- If preferred, you can make it on the stove top by combining the two ingredients in a sauce pan and cooking on low heat 15 -30 minutes and then reducing to simmer as appropriate. You do not want to overheat it to help maintain the chunky texture needed.
