Beef Stews on the stovetop can take up to 8 hours to slow simmer to perfection. With your Instant Pot, you can go from fridge to bowl in an hour. How can you turn that down?
The short answer is you won’t want to. With the healthy addition of some unconventional stew vegetables and the fact that beef stew makes fantastic leftovers, you might find yourself making this recipe regularly.
2B Mindset Instant Pot Beef Stew
Ingredients are always important to any recipe, but it gets more intense when you are trying to make a healthy recipe.
2B Mindset Instant Pot beef stew is a healthy recipe which means you will need healthy ingredients to make it. Of course, you could go with whatever type of ingredients you’d like.
However, it may not fit into a 2B Mindset plan if not done with health in mind. For example, the beef stew meat should be lean.
We will also be using arrowroot powder, avocado oil, organic beef stock, kale, and plenty of other veggies.
How to Make 2B Mindset Beef Stew
In a mixing bowl, combine the Arrowroot powder, salt, and pepper. Then, add the beef chunks and dredge them in the powder combination.
Heat the oil in your Instant Pot on “sauté”. Then, carefully add the beef, not letting the pieces touch each other. Brown for 3-5 minutes on each side. Remove the beef to a plate and set aside. TIP: You will likely have to work in batches depending on the size of your Instant Pot. It’s important to give the beef a little room between pieces for even cooking. Add a little more oil each time you change batches.
Pour one cup of the beef broth into the hot Instant Pot and scrape with a spatula to pick up the tasty, browned bits.
Place the browned beef along with the rest of the ingredients into your Instant Pot.
Place the cover on the slow cooker and lock. Set at high pressure for 30 minutes.
When the cooking time has finished, let the Instant Pot release naturally for 15 minutes. Then, carefully “quick release” the remaining pressure. There should not be much.
Before serving, be sure to remove the bay leaves and taste one more time to adjust seasonings if necessary.
