These super easy shredded beef sandwiches use simple ingredients to create delicious hoagie sandwiches the whole family will love. This recipe is a crockpot recipe.
This means we can turn a simple beef roast into something that can be used all month long as lunch meat. The beef recipe leads to tender and juicy beef that is good enough to eat as it is.
However, we will be shredding it, which is a great way to top hoagies, ciabatta rolls, hamburger buns, whatever kind of bread you want in a good sandwich. This recipe takes anywhere from 6 to 12 hours. Sounds like a recipe not worth making. Until you realize that it is perfectly safe to let a crock pot cook without anyone home, we like to get this started in the morning and let it cook for 6 hours on high while we go out and enjoy our day.

The flavorful beef is ready for me to shred when we get home, and then we get a warm pulled beef sandwich on ciabatta bread or French bread rolls within 10 minutes. Another way it saves time is in the future.

- Beef Roast – We use a 2-pound cabernet beef roast, a pot roast from Trader Joe’s. This is the easiest way to get the recipe done for a crowd. However, you can also use shoulder roast, beef chuck roast, or even pork roast for something a bit different.
- Ciabatta Rolls – We love using ciabatta rolls with a toasted bottom bun. However, you can use any type of bread you like for beef sliders or Italian beef sandwiches.
- Yellow Onion – This part is completely optional. However, adding some grilled onions to the sandwich takes it up a notch. You can also top it with barbecue sauce, mashed potatoes, crispy onions, pepperoncini peppers, red peppers, red onion, green peppers, or even sweet potato fries.
- Swiss Cheese – The only thing that makes these sandwiches better is melted cheese. We use Swiss cheese, but again, you can use any type you’d like, such as provolone cheese or American.

How to Make Shredded Beef Sandwiches
- Sear the pot roast in a cast iron pan on all sides.
- Cook pot roast in crockpot on high for 6 hours or low for 12.
- When the pot roast is almost done, prepare a non-stick skillet with one tablespoon olive oil over medium-low heat. Add onion slices and toss to coat with oil. Cook for 20 to 25 minutes, until onions are soft and caramelized.
- Slice rolls in half and add a pile of shredded pot roast, caramelized onions, and Swiss cheese.
- It is always an option to add condiments like mayonnaise, horseradish, and mustard to your sandwich.
