How to Make a Healthy Breakfast Skillet
In a large frying pan or cast-iron pan, heat 2 tablespoons olive oil over medium heat. Add the chopped onion and garlic and sauté until lightly browned.
Next, add the cubed potatoes and sauté until browned, about 5 minutes.
Add Salami to the potatoes and continue to brown.
In a large bowl, beat the eggs and add grated Parmesan and then add red, yellow, and orange bell peppers.
Pour egg mixture into the pan and reduce heat to low. Add slices of mild goat cheese to the top.
Cook until the eggs are almost set, about 5 to 6 minutes.
Heat the broiler and broil for about 2 to 3 minutes until the eggs are set.

- 4 oz Gallo Salami sliced and cubed
- 2 tbsp olive oil
- 2 baking potatoes peeled and cut into cubes
- 1 small onion chopped
- 2 garlic cloves chopped
- 1 red bell pepper sliced into strips
- 1 yellow bell pepper sliced into strips
- 1 orange bell pepper sliced into strips
- 8 eggs
- 1/2 cup Parmesan cheese
- 4 oz mild goat cheese
Instructions
