This recipe for sauteed spinach and beef can be served with quinoa or brown rice and allows you to get in a large serving of spinach in the process!

Ingredients
6cupsSpinach
6TomatoesOn The Vine
1Medium Yellow Onion
1tbspBrown Sugar
4tbspMargarine
1/2tspGarlic Salt
1.5lbsBoar's Head Roast Beef
Olive Oil
Balsamic Vinegar
4cupsQuinoaor Brown Rice
Instructions
Cook quinoa or steam rice.
Dice tomatoes and onion.
Saute onion with brown sugar and 4 Tbsp margarine. Add a splash of balsamic vinegar.
While doing step 3, saute beef (broken into small pieces) with garlic salt and any additional desired spices. Cover and saute for 4-5 minutes.
Uncover and add tomatoes and sauteed onions and cook until all are warm and blended for about 4 minutes. Do not over stir as this will cause tomatoes to lose their texture.
Add 6 cups spinach and cover. Let spinach soften and mix together with meat mixture.
