Preheat olive oil in Cast Iron pan or large fry pan over medium to high heat. Season both sides of the pork chops with salt & pepper, paprika, onion & garlic powder. Place the pork chops in pan and brown (sear) on both sides. About 3 to 4 minutes on each side.
Remove pork chops from pan and set aside and turn heat to low/medium.
Add beef broth, both soups to pan and whisk to release any brown bits from the bottom of the pan. Add dried parsley and stir to combine.
Put onions, mushrooms & potatoes on the bottom of the crockpot. Place pork chops over the onions, mushrooms & potatoes and then pour the soup mixture evenly over the top.
Turn slow cooker to high and cook for approximately 4 to 5 hours or low for 7 to 8 hours. Be sure and cook pork to recommend temperature 145 F to 160 F.
