Low carb mini bell pepper nachos are a healthy snack that easily fit into your healthy meal planning and also make a great gluten free snack or lunch.

Ingredients
1LbMini Bell PeppersCut in half and remove the seeds
1LbGround Turkey
1/2CupRed Onion
1Garlic CloveMinced
1TspChili Powder
1TspGround Cumin
1/2TspOregano
1/4TspSalt
1CupPrepared SalsaNo sugar added
1CupFresh CilantroRemoved from stem and roughly chopped
1CupBlack OlivesSliced
1Cup Shredded Cheese
Sliced Avocado
1CupSour Cream
Instructions
Preheat the oven to 400 degrees.
In a large, non-stick skillet, over medium heat, begin to brown the ground turkey and chopped red onion. When the turkey is nearly browned, add in the minced garlic.
Remove from heat.
Add all the spices and salsa. Stir to combine all ingredients.
Line a baking tray with parchment paper or foil and arrange the halved peppers on the sheet.
Spoon the turkey mixture over each of the peppers. Then top with the shredded cheese. Bake for 7 to 10 minutes or until the cheese is melted and bubbly.
Remove the nachos from the oven and top with black olives, fresh cilantro, and a dollop of sour cream.
Serve warm with avocado on the side.
