2B Mindset cowboy caviar is a versatile low carb vegetarian snack that can be used as a side dish, with chips and dip, and is perfect for a filling meatless Monday recipe!

Red Bell Pepper
Yellow Bell Pepper
Orange Bell Pepper
Medium Red Onion
Finely chop all vegetables and mix together.
Sprinkle salt and pepper over top of mixture and mix together.
Sprinkle garlic powder over the top of the mixture and mix together.
Sprinkle cilantro over top of the mixture and mix together.
Allow to set in the refrigerator for 30 minutes and serve chilled.
Allow about 30 to 45 minutes to chop the vegetables depending upon your speed and expertise. The rest of the preparation takes twenty minutes tops! This dish will serve 6-8 people easily.
