1.5-2LbsChicken BreastBoneless, Skinless
115 Oz CanPinto BeansOr Black Beans, Drained and Rinsed
115 Oz CanDiced Tomatoes
3CupsChicken Broth
1tspGarlic Powder
1tspOnion Powder
1tspSmoked Paprika
1tspCumin
2tspChili Powder
1CupLong Grain Rice
Salt and PepperTo Taste
1CupColby Jack CheeseShredded
Green OnionsDiced, for Garnish, Optional

Instructions
Place chicken breast in crockpot.
Add seasoning and pour in broth & canned tomatoes.
Cook on high for 4 hours or until the chicken has an internal temperature of 165.
Remove chicken from crockpot and shred with two forks.
Stir in rice and beans, then combine.
Add shredded chicken back to the crockpot and stir.
Cook on high until the rice is done or the preferred texture and liquid are evaporated, for approximately 1 hour.
Next, add shredded cheese, green onions, and diced tomato to the top of the crockpot mixture and cook for about 10 minutes, until the cheese is melted.
Serve in bowls with preferred toppings.
