4-5Boneless, Skinless Chicken Breasts
4CupsChicken Broth
3CarrotsCut into rounds
3Celery StalksSliced

4CupsZucchini Noodles

2Bay Leaves

Instructions
Heat oil in a medium pan and sauté onion, celery, garlic, and carrots about 5 minutes until tender.
Add the vegetables to your Crock Pot and add all remaining ingredients, except for the zucchini noodles. Cover and cook on high for 3 hours or low for 6 hours. Chicken should be tender and fall apart easily with a fork.
Prepare your zucchini noodles. If they are fresh, you may need to sauté them for a few minutes in a medium pan with a little water to soften them to your taste.
Remove the cooked chicken from the pot and place in a large bowl. Shred the chicken with 2 forks and place back into the soup.
Place zucchini noodles in each serving bowl and spoon soup over the noodles when you are ready to serve.
