Chicken and Tzatziki in Pita Pockets
Main Course, Main Dish
Cut into bite sized pieces
Cut in half, could also use any tomatoes you like
Homemade or from the grocery store
In a large gallon baggie add olive oil, lemon juice, paprika, cumin, garlic powder, oregano, salt & pepper.
Cut chicken into bite size pieces (cutting against the grain will keep chicken tender).
Add bite sized chicken pieces to gallon baggie. Seal and make sure chicken is coated in seasoning and then place in the refrigerator for 2 hours but no longer than 5 hours.
Remove chicken from the refrigerator and empty baggie onto a foiled lined baking sheet spreading out the chicken pieces. Broil on high for 15 to 20 minutes or until browned and cooked through.
Chopped up cucumber, tomatoes and lettuce and lay out for serving.
Add Greek yogurt, lemon juice, English cucumber, dill, garlic cloves, olive oil to food processor or blender and combine.
Pour Tzatziki sauce into serving dish or squeeze bottle.
Build the chicken and tzatziki in pita pockets by adding the chicken, toppings, and sauce to the inside of the pita. Enjoy!
