This Crock Pot Beef Barbacoa recipe is layered with citrus flavors, chilis, and spices. Chuck roast is the perfect kind of low carb protein to slow cook.

3LbsBeef Chuck RoastCut into Cubes like Stew Meat
1/4 CupBeef Broth
1/4CupFresh Lime JuiceAbout 2 Limes
2TbspApple Cider Vinegar
3Chipotle Chiles in Adobo SauceChopped Small, with Some Sauce
Oil or ButterFor Browning
Sprinkle the beef with salt and pepper and set aside.
Add the remaining ingredients to a food processor or into a small bowl to blend with a stick blender. Blend until all the ingredients are incorporated. Set aside.
Heat the oil in a large skillet over medium-high heat and add the beef. Brown on both sides, about 2-3 minutes per side. When you are browning the second side, add the onions to the pan and let them cook slightly.
Add the beef to your Crock Pot, then pour the sauce over the top. Secure the Crock Pot lid and cook for 4-6 hours on high or 8-10 hours on low.
Once the barbacoa is cooked, you can give it a quick shred with two forks and serve warm.
