Ingredients
For the Crust
2cupsflour
1/2cupbakers' sugar
1stickbutter8tbsp
Cooking Spray
Lemon Bar Filling
2cupsgranulated sugar
1/4cupflour
1/2cuplemon juice
1tspbaking powder
2tspgrated lemon peel
4eggslightly beaten
salta pinch will do
Instructions
For the Crust
Preheat the oven to 350 degrees.
Line a 9″x13″ baking pan with tin foil leaving the edges high to function as handles to pull the dessert out of the pan when cooled.
Evenly coat foil with cooking spray.
In a large bowl, combine flour, bakers’ sugar, and melted butter and mix until blended. Press into the bottom of the pan.
Bake until lightly browned for about 20-25 minutes.
While the Crust Bakes
In a large bowl combine sugar, baking powder, flour, and salt and mix until well blended. Add the lemon juice, lemon peel, and eggs and mix thoroughly.
Pour filling over baked crust and bake about 20 minutes until the topping sets and the edges are lightly browned.
Remove from oven, allow to cool completely and dust with powdered sugar.
To finish off these delicious lemon bars, lift the bars out of the pan with the foil when they are cooled. Cut into 2-inch bars and serve.
