I have been following the South Beach Diet since mid-January and trying really hard to eat a bit healthier and tried this great homemade guacamole recipe. Nothing too strict – just an effort to lose the last 10 pounds from three babies. An effort I am happy to say I was successful with. For me, my biggest problem is that I LOVE sweets. And prior to South Beach, I clearly did not eat enough vegetables. I am maintaining my weight and losing another pound here or there, but I am still working on refining my eating a bit. This homemade guacamole recipe helps me maintain my weight and is absolutely delicious!
Homemade Guacamole Recipe Ingredients:
-3 ripe avocados (scoop out)
-1 roma tomato
-4 Green Onions
-1 Tbsp Jalapenos (I think next time I will try a few more)
-1 bunch of cilantro (equivalent to 1/2 cup)
-1 lime juiced to equivalent of 1 Tbsp or so
-1/2 tsp salt
Homemade Guacamole Recipe Instructions:
Tossed the ingredients in the Vita-Mix and blend until you achieve your desired consistency.
